Ingredients
1 Besan [gram flour] 2 cups
2 Lauki [bottle gourd], peeled & grated 1/2 cup
3 Ginger-green chili paste 1 + 1/2 teaspoons
4 Red chili powder 1/2 teaspoon
5 Coriander powder 1/ 2 teaspoon
6 Cumin powder 1/2 teaspoon
7 Baking soda 1/4 teaspoon
8 Oil 1 + 1/2 tablespoons
9 Fresh coriander, chopped 2 tablespoons
10 Fresh coconut, grated 2 tablespoons
11 Sesame seeds 2 teaspoons
12 Salt to taste
Method
Combine besan, lauki, ginger-chili paste, red chili powder, coriander powder, cumin powder, garam masala, soda, salt and enough water and knead to a tight dough. Now make 3 long tubes out of it and steam it either in steamer or in a large pot of hot water, until cooked through, for 20-30 minutes. let it cool, then cut them into 1-inch round pieces and set aside.
Heat oil in a pan, add mustard seeds and sesame seeds and let it splutter, add muthia into it, stir to coat well and cook until all the moisture is absorbed and muthia becomes slightly crisp and oil comes out on the surface. Transfer it to the serving plate, garnish it with chopped coriander and grated coconut and serve.
