Galangal root [or Ginger], sliced |

Kaffir lime leaves |

Light chicken stock or water |

Fish sauce [Soy souce for vegetarians] |

Lemon grass peeled and chopped the soft parts only |

Hot green Thai chili peppers cut into halves, [optional] |

Straw mushrooms, sliced |

Lime juice |

Roasted chili paste |

Fresh coriander leaves, chopped, for garnish |

| Method |
|
Boil the stock over medium heat; add garlic, galangal, lemongrass, lime
leaves, fish sauce and shallots and simmer for 5 mins. Now add mushrooms
and chili paste and cook for further 2 mins then add shrimps and reheat to
boiling, cook until the shrimps are pink, opaque and firm, but no longer than
1 min. Now add lime juice, garnish it with coriander and serve.
