Ingredients
1 Chicken or turkey breasts, thighs or drumsticks 2
2 Fresh shrimps(cooked or raw) 1 cup
3 Cucumber(cut into match stick like pieces) 1
4 Spring onions(cut into match stick like pieces) 3
5 Star fruit(peeled and segmented) 4
6 Roses
(preferably of different colours, washed and petals are separated)

7 Roasted unsalted peanuts (roughly chopped) 1/4 cup
8 Fresh coriander leaves(chopped) 1 cup
9 Fresh basil leaves(teared or lightly chopped) 1/2 cup
For salad dressing-
1 Fish sauce 2 tablespoons
2 Garlic(minced or 1 teaspoon pureed bottled garlic) 2 cloves
3 Sugar 1 tablespoons
4 Lime juice of one lime
5 Chili sauce or 2 fresh minced red chilies 2 tablespoons
Method
For chicken-
In a bowl, mix chicken with 3 tablespoons of soy sauce, cover and bake at 375 degrees for 45 minutes. When cooked, shred or cut into thin strips.
For shrimps-
Boil water in a deep pan, add shrimps and cook for 3 minutes, drain well and remove the shells.
For dressing-
Mix all the ingredients of dressing in a bowl to dissolve sugar. If it is too sour add more sugar, if it is too salty add more lime juice.
 
In a bowl, mix together the chicken, shrimps, cucumber, coriander, basil and Spring onions. Pour the dressing over and mix well. Now add ¾ of the rose Petals, combine. Pour it in a serving dish; garnish it with the remaining petals And slices of star fruit and serve.
