Coconut Noodles With Chicken And Shrimps

Ingredients
1 Large shrimps , shelled and deveined 8
2 Skinless and boneless chicken breasts 125 grams
3 Rice noodles , soaked in water for 15 minutes and then drained 250 grams
4 Vegetable oil 1 tablespoon
5 Garlic , chopped 2 cloves
6 Tamarind paste 2 tablespoons
7 Onion , roughly chopped 1
8 Green onions , cut into 1-inch pieces 2
9 Warm water 2 tablespoons
10 Unsweetened coconut milk 2 cups
11 Salted soy beans 1 tablespoon
12 Sugar 1 tablespoon
13 Fish sauce 4 teaspoons
14 Tomato paste 1 teaspoon
15 Bean sprouts 1 cup
16 Eggs 2
17 Red pepper , cut into thin strips 1/2
18 Fresh coriander leaves , finely chopped 2 tablespoons
19 Cucumber, cut into slices 1/2
Method
Place the chicken and shrimps on a board, and by using large knife, pound and chop until minced and thoroughly combined. Reserve.
Combine tamarind paste with a warm water and let it set for 15 minutes, mash it, pass through the strainer and reserve the tamarind juice. Heat oil in a wok over over high heat, add garlic and stir-fry for 30 seconds, now add onion and fry for 1 minute. Now add coconut milk and fry for 2 minutes, then add chicken and shrimp and cook for 2 minutes until the meat break-up and appear to be cooked. Now add salted soy beans, sugar, tamarind juice and 1 teaspoon of fish sauce and cook for 2 minutes until thickens. Transfer to a bowl and cover.
Heat the remaining 1 cup of coconut milk in another wok, add tomato paste, water and 3 teaspoons of fish sauce and cook until it bubbles. Now add the noodles and cook for 2 minutes, add 3/4 of the bean sprouts and green onions and fry for 1 minute. Transfer to a bowl and immediately topped it with reserved chicken-shrimp stir-fry and cover to keep warm. Heat oil in a frying pan, beat the eggs lightly in a bowl and add it to the oil and fry them for 2 minutes. Top the noodle dish with these eggs, garnish it with red pepper strips and cucumber slices and serve.
