Thai sweet rice [also known as sticky or Glutinous rice] |

Crushed peanuts or toasted coconut |

| Method |

Put rice in a large pot together with 2 cups of water and allow to soak for 10
minutes. Now add 1 1/2 cups more water, 1/2 teaspoon of salt and stir. Place
over high heat, bring to a boil, cover and simmer for 15 minutes, until the
water has been absorbed. Turn off the heat, but keep the pot over burner,
place the lid and allow the rice to steam for 10 minutes. Now add the coconut
milk , stirring until incorporated, turn heat on low, add sugar and spices and
simmer. Serve in a bowl, garnish with either crushed peanuts or toasted
coconut and serve.
