Eggplant, chopped |

Zucchini, cut halfway and then sliced |

Green bell pepper, seeded and sliced |

Ripe tomatoes, peeled and chopped |

Extra-virgin olive oil |

| Method |
Heat oil in pan, add onions and saute for 2 minutes, until soft. Now add
eggplant, zucchini, bell peppers and tomatoes, stir and cook for 5 minutes.
Now add salt, pepper , tomato paste and basil , stir, cover and simmer
for 20 minutes. Remove the lid and cook until the liquid is absorbed.
Garnish it with few basil leaves and serve.
