Large lettuce leaves |

Jalapeno pepper, seeded and finely chopped |

| For peanut dressing- |

Peanut butter |
3 tablespoons |

Lemon juice |
3 tablespoons |

Water |
3 tablespoons |

to taste |

Freshly ground black pepper powder |
to taste |

Olive oil |

Fresh parsley, finely chopped |

| Method |
In a bowl, whisk in together all the ingredients of the dressing and set aside.
In another bowl, mix scallions, avocado, jalapeno, sprouts, carrots and
celery. Pour the dressing over the vegetable mix, mix well. Now place a
tablespoon of the mixture in the middle of the lettuce leaf, fold the two sides
of the leaf into the middle, then roll it up from stalk to the tip and fasten with
the tooth pick. Repeat with the other leaves and serve.

essential fatty acids.
