Ingredients
1 Large lettuce leaves 10
2 Celery, finely chopped 1 stalk
3 Scallions, finely chopped 3
4 Carrot, finely chopped 1
5 Avocado, peeled and chopped 1
6 Bean sprouts, fresh 1 cup
7 Jalapeno pepper, seeded and finely chopped 1
For peanut dressing-
8 Peanut butter 3 tablespoons
9 Lemon juice 3 tablespoons
10 Water 3 tablespoons
11 Salt to taste
12 Freshly ground black pepper powder to taste
13 Olive oil 1/2 cup
14 Fresh parsley, finely chopped 2 tablespoons
Method
In a bowl, whisk in together all the ingredients of the dressing and set aside. In another bowl, mix scallions, avocado, jalapeno, sprouts, carrots and celery. Pour the dressing over the vegetable mix, mix well. Now place a tablespoon of the mixture in the middle of the lettuce leaf, fold the two sides of the leaf into the middle, then roll it up from stalk to the tip and fasten with the tooth pick. Repeat with the other leaves and serve.
