Ingredients
1 Mexican avocados, peeled and chopped 2
2 Serrano chili, seeded and minced 1
3 Freshly grated orange zest 1/2 teaspoon
4 Fresh orange juice 1 cup
5 Chicken broth [cold] 2 cups
6 Salt to taste
7 Freshly ground black pepper to taste
8 Fresh cilantro leaves, finely chopped 2 tablespoons
9 Tequila 1/4 cup
Method
In a bowl of a blender, combine Serrano chili, cilantro, 1/4 cup of orange juice and blend to a smooth paste. Now add the remaining orange juice, orange zest , tequila, chicken broth and avocados and blend until smooth. Pour mixture through a course sieve into a large bowl. Season it with salt and pepper. Refrigerate it for atleast 2 hours, until chilled, garnish it with chopped coriander and serve.
