Ingredients

Jicama, peeled and chopped |

Large radishes, halved lengthwise and then thinly sliced |

Oranges, peeled and cut into segments |

Scallions or green onions, thinly sliced |

| Method |

Combine the oil, lime juice, salt and pepper in a bowl. Now in a large salad
bowl, combine together the jicama, oranges, scallions and radishes. Drizzle
the dressing over the salad, add the cilantro, gently toss to combine and serve.
