Ingredients
1 Large eggs 10
2 Frozen spinach, thawed and drained 1 box
3 Olive oil 1 tablespoon
4 Fresh parmesan cheese, shredded 3 tablespoons
5 Salt 1/2 teaspoon
6 Freshly ground black pepper 1/ 4 teaspoon
7 Jalapeno pepper, seeded and finely chopped 1
Method
In a medium bowl, beat eggs, cheese, salt and pepper and whisk it until thoroughly blended.
Heat oil in a non-stick skillet over medium heat, add spinach and cook for 4 minutes, by constantly stirring it. Now pour the egg mixture over spinach and cook over medium heat for 6 minutes, until eggs are set and light golden on the bottom. Cut into wedges and serve
