Frozen spinach, thawed and drained |

| Method |
In a medium bowl, beat eggs, cheese, salt and pepper and whisk it until
thoroughly blended.
Heat oil in a non-stick skillet over medium heat, add spinach and cook for 4
minutes, by constantly stirring it. Now pour the egg mixture over spinach
and cook over medium heat for 6 minutes, until eggs are set and light golden
on the bottom. Cut into wedges and serve
