| For the crust- |

| Method |
For crust- Combine the flour, butter and shortening in a bowl of a food processor or
of a standing mixer and process until becomes sandy grain like. Now add
sugar, salt and 2 tablespoons of ice-cold water. By using fork, stir it in the
flour mixture until incorporated. Add more water if needed. Damp the
dough on a floured surface, press the dough together into a flat disc. Wrap
in plastic and refrigerate for at least 1 hour.
On a lightly floured surface, roll the dough into a 12-inch circle. Transfer to
a 9-inch pie pan. Crimp the edges and trim the excess dough. Refrigerate
for 30 minutes. Heat the oven to 400 degrees f. Lightly oil a 15-inch piece of
foil and lay it, oiled-side down, into the crusts, press down to line the crust.
Fill with beans or pie weights and bake for about 15 minutes, until begins to
brown around the edges. Reduce the oven temperature to 350 degreesf.
Now carefully remove the beans and foil, return the crust to the oven and
bake further for 10 minutes. Brush the beaten egg yolk over the crust, and
let it cool completely.
For filling- In a large bowl, combine the eggs, lime zest, sugar and flour and
beat until thoroughly combined. Now add heavy cream, lime juice,
orange juice and orange liqueur.
Pour the filling into the pre-baked pie shell, set in the third rack and bake
at 350 degrees oven, until nearly set in the centre, for about 45 minutes.
Cool slightly, dusted with powdered sugar and serve.
