Tips and Tricks For Mexican Cooking
1 Masa, which is used to make fresh corn tortilla, is made of dry kernels, ground and mixed with water and a little ground limestone.
2 Tortilla press is more often used in Mexican cooking, is a device used to flatten balls of masa into thin patties to make tortillas.
3 Chiles are a key ingredient in most Mexican food dishes. There are reportedly over 60 varieties of chilies, ranging from very mild to fiery hot.
4 Salsa, is the most basic dish in Mexican cooking, often served as an appetizer with chips and used to jazz up eggs to dinner meals.
5 Salsas can be made from fresh, raw vegetables[tomato salsa..] or cooked [Black bean salsa..].
6 Stuffed poblano chilies, is the most famous Mexican recipe after tortilla. First the chili is charred, then the skin, stem and the seeds have been removed, then make a slit on one side and stuff it with cheese.
7 A Molcajete is a stone mortar, used mostly to grind chilies for salsas.
8 Poblano peppers are widely used in Mexican cooking, they are dark green in color. They can be mild or quite hot.
9 Chipotles chilies are the dried and smoked jalapeno chilies. They are available in both dried and with adobo, a dark reddish-brown sauce. Their flavor very unique and tasty.
10 Ancho chilies are dried dark-red poblano chilies. They are mild in flavor and and used in many sauces.
11 Jalapenos are the most recognized and widely used of all Mexican chilies.
12 Habeneros are the hottest chilies in the world. They are tiny, bright orange in color and their flavor is delicious, if used sparingly.
13 Ceviche is a very famous Mexican dish. It is made from raw fish, marinated until cooked in lime juice. After that it is combined with tomatoes, onions, spices and chilies and served.
14 Guacamole, is the most famous Mexican dip, made from fresh avocados.
15 Avocados are delicate, delicious and healthy fruit, green on color and is widely used in Mexican cooking to make either guacamole[dip] or salsas.
