Minestrone Soup

Ingredients
1 Shredded cabbage 1/2 cup
2 Stewed tomatoes 1 can
3 Tomato paste 1 tablespoon
4 Potatoes, peeled and cubed 2
5 Garlic, minced 2 cloves
6 Onion , finely chopped 2
7 Celery 1/4 cup
8 Carrots 1/2 cup
9 Cannellini beans 1 can
10 Chicken broth 1 quart
11 Dried parsley 2 tablespoons
12 Salt 1 teaspoon
13 Elbow macaroni 1/2 cup
14 Parmesan cheese 1/2 cup
15 Margarine 4 tablespoons
16 Pepper powder 1/2 teaspoon
17 Butter 2 tablespoons
Method
Heat butter in a pan over medium heat. Add the onion, celery and carrots and cook until tender. Now add the beans, cabbage, tomatoes, tomato paste, potato , garlic, parsley, salt, pepper and chicken stock, stir, bring to a boil, cover and simmer for 1 hour. Now add pasta and simmer for 30 minutes. Reseason and serve.
