Italian bread, cut into 3/4-inch cubes |

| Method |
For croutons- In a bowl, drizzle the bread cubes with the oil, tossing them to coat
evenly and season them with salt. Spread the bread cubes in a jelly-roll pan,
toast them in the middle of a preheated oven at 350 degrees f, for 15-20
minutes, or until they are golden and let them cool.
In a large bowl, combine well the chicken, tomatoes, scallions, mayonnaise
and salt and pepper to taste. Garnish it with basil sprigs and serve.
For basil mayonnaise-
Ingredients-
Good quality mayonnaise - 1 cup
Basil leaves, packed - 1/4 cup
Lemon zest - 1 teaspoon
Lemon juice - 1 tablespoon
Method- Place all the ingredients in a blender and blend until smooth.
