| Method |
Boil a good quantity of water in a large pot, add 2 tablespoons of salt and
pasta and cook it according to the package directions.
In a blender, place the mint, fennel fronds, basil, parsley, garlic, capers,
tomatoes, black pepper, red pepper flakes and half of the olive oil. Blend it to
a roughly chopped. Turn blender on full speed and drizzle in the remaining
oil and process until smooth. Remove the pesto from the blender and set aside
for 1 hour. Toss the pasta with the pesto. Sprinkle the pasta with the grated
pecorino cheese and red pepper flakes and serve.
