Ingredients
1 Fresh mint leaves 1/2 cup
2 Fennel fronds 1/2 cup
3 Fresh basil leaves 1/2 cup
4 Garlic 2 cloves
5 Fresh parsley, chopped 6 tablespoons
6 Capers, drained 2 tablespoons
7 Plum tomatoes, roughly chopped 4
8 Black pepper powder 1 teaspoon
9 Crushed red pepper flakes 1 teaspoon
10 Extra-virgin olive oil 1/2 cup
11 Sea salt to taste
12 Ziti 1 pound
13 Pecorino cheese, grated 1 cup
Method
Boil a good quantity of water in a large pot, add 2 tablespoons of salt and pasta and cook it according to the package directions.
In a blender, place the mint, fennel fronds, basil, parsley, garlic, capers, tomatoes, black pepper, red pepper flakes and half of the olive oil. Blend it to a roughly chopped. Turn blender on full speed and drizzle in the remaining oil and process until smooth. Remove the pesto from the blender and set aside for 1 hour. Toss the pasta with the pesto. Sprinkle the pasta with the grated pecorino cheese and red pepper flakes and serve.
