| Method |
|
In a bowl of a food processor, mix flour and salt. Process to mix well, now
add the eggs, egg yolks, salt and olive oil through the feed tube and process
until it resembles the wet cornmeal, for about 2 minutes. Take a handful of
dough at a time and form into a firm ball. Repeat with the remaining dough.
It is now ready to use or refrigerate for further use.
Roll out each dough ball into desired shape in a pasta machine. Boil a good
quantity of water in a large pot, add salt and fresh pasta and cook until just
al dente [about 3 mins]. Drain and serve with desired sauce.
