Shrimp Marinated In Lemon And

Ingredients
1 Large shrimps, in their shells 1 pound
2 Lemon juice 3 1/2 teaspoons
3 Tomato, seeded and cut into 1/4- dice 1
4 Olive oil 2 tablespoons
5 Salt 1/4 teaspoon
6 Freshly ground black pepper 1/8 teaspoon
7 Fresh parsley, chopped 2 tablespoons
Method
Boil a good quantity of water in a large pot, add salt and shrimps, cover and boil for 2 minutes, until the shrimps are just done. Drain, let the shrimp cool and then peel them. In a large bowl, combine the lemon juice, olive oil, tomato , salt, pepper and parsley. Add the shrimps and toss.

Introduction of the dish
While time to eating this dish, the patience will be rewarded, the shrimps taste better the longer they sit in the marinade. Let them sit for couple of hours and see the difference.
