Large shrimps, in their shells |

Lemon juice |

Tomato, seeded and cut into 1/4- dice |

Fresh parsley, chopped |

| Method |
|
Boil a good quantity of water in a large pot, add salt and shrimps, cover and
boil for 2 minutes, until the shrimps are just done. Drain, let the shrimp cool
and then peel them. In a large bowl, combine the lemon juice, olive oil, tomato
, salt, pepper and parsley. Add the shrimps and toss.
