Baingan (brinjal), peeled & roughly chopped |

Oil or ghee |

Fresh coriander powder, finely chopped |

| Method |
Wash baingan pieces well, transfer it to the pressure cooker with 1 cup of water, put the lid on and cook for 2 whistles plus 15-20 minutes an low. Turn off the heat and let it open. Mash baingan with the help of ladle and set aside.
Heat oil or ghee in a pan over medium-high heat, add cumin seeds and let it splutter, now add ginger, chilies and asafetida and fry for 30 seconds, now add tomatoes,, stir and cook over medium heat until tender ; add boiled and mashed baingan, coriander powder and salt, stir and cook until thickens and oil comes out on the surface by occasionally stirring it. Garnish it with chopped coriander and serve.
