Ingredients
For cover -
1 Maida [all purpose flour] 1 cup
2 Warm oil 2 tablespoons
3 Water to knead the dough
For filling -
4 Potatoes , boiled & peeled 3 large
5 Onion , thinly sliced 1
6 Green chilies, crushed 3
7 Ginger, crushed 1/2 teaspoon
8 Garlic , finely chopped 1/2 teaspoon
9 Green coriander, finely chopped 1 tablespoon
10 Amchoor [khatai] powder 1 tablespoon
11 Garam masala 1/2 teaspoon
12 Coriander seeds, crushed 1/2 teaspoon
13 Red chili powder 1 teaspoon
14 Salt to taste
15 Oil for frying
Method
For cover -Add all the ingredients and knead into a soft dough, cover it with wet cloth and set aside.
For samosa- Heat 2 tablespoon oil in a pan, now add onions, garlic, ginger and green chilies and stir for 2 mins. Now add crushed coriander seeds and cook until onions are brown, now add turmeric powder stir and then add potatoes, garam masala, red chili powder, salt and cook for 5 mins. Now add green coriander and lemon juice and let it cool. Make a small ball out of dough; roll it into roti, cut in half, put small potatoes filling in it make a triangle and fry it in oil over medium heat.

This is the most famous street food of India.You can also add paneer pieces in potato filling to make paneer samosa.
