Ingredients
1 Cauliflower, cut into big florets, washed 1 medium
2 Spring onions or green onions, finely chopped 3
3 Ginger, peeled & finely chopped 2 teaspoons
4 Garlic, peeled & finely chopped 5 cloves
5 All-purpose flour (maida) 1/4 cup
6 Corn flour, dissolved in 4 tablespoons of water 2 tablespoons
7 Corn flour 2 tablespoons
8 Red chili powder 1/2 teaspoon
9 Salt to taste
10 Soy sauce 1 + 1/2 tablespoons
11 Whole dried red chilies, crushed 2
12 Oil 3 tablespoons
13 Milk 1 tablespoon
14 Water 1 + 1/2 cups
Method
Boil a good quantity of water in a large pot over high heat, add cauliflower florets and boil for 4 minutes. drain and pat it dry.
Combine maida, cornflower, 1 teaspoon of ginger, 1/2 teaspoon of garlic, red chili powder, salt and water in a bowl, to make a thick batter. Dip the cauliflower florets in this batter and fry in hot oil until golden and crispy. Set aside.
Heat 2 tablespoons of oil in a pan over high heat, add ginger, garlic and crushed red chili and fry for 30 seconds, now add green onions and stir-fry for 1 minute. Add salt, red chili powder, soy sauce and 1 + 1/2 cups of water, bring to a boil, now add corn flour mixture and again bring to a boil until thickens. Now add cauliflower, stir well to coat all over, and cook for 2 minutes. garnish it with chopped green onions and serve.
