| Method |
There are 2 ways to prepare brinjals for the bharta;
{a} Peel the brinjals and chop them, now transfer it to the pressure cooker
together with 1 cup of water and cook for 2 whistles and 15 minutes on
low. Let it open, then mash them and set aside.
{b} Roast the whole brinjals, either over the flame of the burner or in the oven
until the upper skin turn blackish-brown. Now let it cool to handle, then peel
the upper skin, mash and set aside.
Heat the oil in a pan or kadahi over medium-high heat, add cumin seeds and let it
splutter. Now add onions and cook for 2 minutes, then add ginger, garlic and green
chilies and cook until lightly browned. Add tomatoes and powdered spices, stir,
cover and cook over low heat until the tomatoes become tender. Now add mashed
brinjal and cook until all the moisture have been evaporated. Garnish it with
chopped coriander and serve.
