Cucumbers, large |

Onion, finely chopped |

Fresh heavy cream |

| Method |

Peel and cut whole cucumber into 3 parts, now scoop out the centre to make
a hole in each piece. Cut the left over scooped cucumber pieces finely.
In a bowl, combine all other ingredients together with chopped cucumber and
refrigerate for at least 30 minutes. Now fill each hollowed cucumber piece with
cream mixture, garnish it with chopped coriander or mint and serve.
