| Method |

Wash and pat dry bhindi well, now make a lengthwise slit in all bhindi, but do
not cut to separate. In a bowl, combine together, chat masala, amchur, 1
teaspoon of fennel powder, 1/2 teaspoon of red chili powder and 1/4 teaspoon of
salt, mix well. Now equally stuff all bhindis with this masala and set aside.
Heat oil in a pan over medium-high heat, add cumin seeds and let it splutter,
now add onions, ginger and garlic and cook until lightly browned. Add all the
remaining powdered spices and salt with 1/2 cup of water and cook until oil
comes out on the surface. Add bhindi and green chilies, stir, cover and cook
over low heat until tender and all water is absorbed, uncover and cook for
further 2 minutes and serve
