| Method |
For masala- Heat oil in a pan or kadahi over medium-high heat, add cumin,
urad dal and mustard seeds and let it splutter, now add ginger, onions and
cashews and cook until lightly browned. Now add all the powdered spices with 1/2
cup of water and cook until oil comes out on the surface , then add
chopped potatoes , mix well to coat all over and cook for 5 more
minutes. Add curry leaves and cook for 2 minutes and set aside to cool.
For dosas-
Soak dal and rice with methi dana overnight, drain and blend to smooth
mixture.Whisk well to mix both dal and rice together and set aside in
warm place for at least 8 hours until puffed a bit.
Heat the dosa griddle over medium-high heat, grease it with the help of
cotton or cloth, pour a ladle full of batter and spread it immediately, cook
on one side, add enough potato filling aand fold it in triangle and serve.

Plain dosa, but stuffed with delicious stuffing of potato and onions, you can also use paneer or peas in place of potatoes.
This is one of the most famous food of Southern India.
It is widely eaten all over India.
