Shahi Paneer

Ingredients
1 Paneer[cottage cheese] 250 grams
2 Onions, thinly sliced 2
3 Ginger, finely chopped 1/2 teaspoon
4 Garlic, finely chopped 5 cloves
5 Green chilies , finely chopped 2
6 Tomatoes, finely chopped or pureed 4
7 Beaten curd 2 tablespoons
8 Milk 1/2 cup
9 Red chili powder 1 teaspoon
10 Salt to taste
11 Coriander powder 1 + 1/2 teaspoons
12 Garam masala 1/2 teaspoon
13 Cumin seeds 1/2 teaspoon
14 Bay leaf 1
15 Cardamom, crushed 2
16 Cinnamon stick 1 small
17 Black pepper powder 1/4 teaspoon
18 Grated paneer 1 tablespoon
19 Fresh coriander leaves, finely chopped 2 tablespoons
20 Oil or ghee 3 tablespoons
Method
Heat oil or ghee in a pan over medium-high heat, cut paneer into small cubes, and deep fry them in hot oil until golden-brown, drain and set aside.
Now to the same pan add cumin, bay leaf, cinnamon and cardamom and let them splutter, now add onions and cook for 2 minutes, add ginger, garlic and green chilies and cook until lightly browned. Now add tomatoes, stir, cover and cook until tender. Add all the powdered spices, milk and curd and cook over medium low heat until oil comes out on the surface. Now add paneer pieces and enough water to make the gravy, bring to a boil, cover and cook over medium-low heat until paneer becomes soft, for about 15 minutes. garnish it with grated paneer and chopped coriander and serve.
