Onion Fried Rice

Ingredients
1 Basmati rice 1 + 1/2 cups
2 Onions, thinly sliced 2
3 Cinnamon 1 stick
4 Bay leaf 1
5 Black cardamom 2
6 Green cardamom 2
7 Cloves 4
8 Cumin seeds 1/4 teaspoon
9 Garam masala 1/4 teaspoon
10 Salt to taste
11 Oil or ghee 1 + 1/2 tablespoons
Method
Wash rice well, drain and set aside. Heat oil or ghee in a pan, add cumin seeds, cinnamon, cloves, cardamom and bay leaf and let them splutter. Now add onions and fry until brown. Add rice and fry for 3 minutes until toasted. Now add 3 cups of water and salt, stir, bring to a boil, cover and cook over low heat, until all the water is absorbed, turn off the heat, and let it rest covered for 10 minutes. Serve.
