Lemon Rice

Ingredients
1 Kolum rice, washed 3 cups
2 Water 5 cups
3 Chana dal 1 teaspoon
4 Urad dal 1 teaspoon
5 Mustard seeds 1 teaspoon
6 Turmeric powder 1/2 teaspoon
7 Curry leaves 10
8 Green chilies, chopped 8
9 Oil 1/2 cup
10 Lemon juice 1/2 cup
11 Salt 3 teaspoons
Method
Add 5 cups of water in a pressure cooker, and boil it. When it begins to boil, add rice and turmeric, stir, cover the pressure cooker and cook for 1 whistle and 3 minutes on low. Let it open. Fluff the rice with the help of fork. Heat oil in a pan over medium-high heat, add mustard seeds, urad dal and gram dal and let it splutter. Fry until dal becomes golden. Add curry leaves and green chilies and cook for 1 minute. Pour this tadka over rice, stir. In a bowl, mix lemon juice and salt, now add this to rice, stir well and serve.

Introduction of the dish
Lemon juice lightens the flavor of rice. If you don't find Kolum rice, use basmati rice in place.
