| Method |
In a large bowl, mix yogurt, ginger-garlic paste, all ground spices, salt
and chicken, mix well to coat all over the chicken. Set it aside for 4 hours.
Heat oil in a pan on high heat, add onions and fry until brown and crisp,
drain and set aside.
Boil 5 cups of water in a large pan, add well washed rice and salt, cook the
rice until it is almost done, drain immediately and set aside.
Heat 2 tablespoons of oil in a pan; add chicken to it, spreading to form a layer
Over the chicken, make a layer of half the rice, onions and coriander leaves.
Repeat the same layer a second time and cover the pan with a lid, sealing it
with some dough. Cook it on medium heat for 10 mins, then place on the
griddle [tava] and leave on low heat to cook for 1 hour or you can cook it in
oven at 300 degree f for 1 hour. Now break the seal and serve.
