Carrot Rice

Ingredients
1 Rice, cooked 3 cups
2 Carrots, peeled & finely chopped 2
3 Onions, thinly sliced 2
4 Green chilies, chopped 3-4
5 Ginger-garlic paste 1 teaspoon
6 Cumin seeds 1/2 teaspoon
7 Turmeric powder 1/4 teaspoon
8 Red chili powder 1/2 teaspoon
9 Garam masala 1/2 teaspoon
10 Salt to taste
11 Oil or ghee 3 tablespoons
12 Fresh coriander leaves, finely chopped 3 tablespoons
Method
Heat oil in a pan over medium-high heat, add cumin seeds and let it splutter, now add onions and fry until light brown, add ginger-garlic paste and green chilies and fry for 1 minute, now add carrots, turmeric powder, red chili powder and salt, stir, cover and cook until carrots becomes tender. Add rice, stir well and cook for 3-4 minutes. Garnish it with chopped coriander and serve.
