| Method |
|
Heat oil or ghee in a pan over high heat, add paneer cubes and fry until light
brown, drain and set aside. Now in the same pan, add cumin, bay leaf,
cloves, cinnamon, peppercorns and cardamom and let them splutter. Now
add onions and cook until light brown, add ginger-garlic paste and cook for
further 1 minutes. Add all the vegetables and cook until slightly tender, now
add turmeric powder, chili powder and salt and cook for 1 minute. Add well
washed rice, add 3 + 1/2 cups of water, stir, bring to a boil, cover and simmer[
cook over low heat] until all the water is absorbed. Turn off the flame, add
cashews, stir and let it rest covered for at least 10 minutes.
