Raw mangoes, cut into large pieces |

Turmeric powder |

Fennel seeds (saunf), powdered coarsely |

Fenugreek seeds, coarsely powdered |

Onion seeds (kalaunji) |

Asafetida |

| Method |
Combine salt and 1/4 cup of turmeric powder with mango pieces and keep overnight in a steel or glass container.
Next day, squeeze all the liquid out of the mangoes and set aside till ready to use. Spread the mangoes out in the sun to dry, for 2-3 days.
Mix rest of the ingredients into liquid and set aside and then into the dried mangoes. Transfer into the sterilized jar and allow it to remain in sunlight for 5-6 days.
