Ingredients
1 Paneer[cottage cheese], cut into small cubes 200 grams
2 Spinach, washed, boiled and pureed 1 kg
3 Ginger, finely chopped 1 teaspoon
4 Onions, finely chopped 2
5 Garlic, finely chopped 5 cloves
6 Tomatoes, finely chopped or pureed 4
7 Cumin seeds 1/2 teaspoon
8 Whole red chilies 2
9 Fresh cream 2 teaspoons
10 Grated paneer, for garnish 1
11 Red chili powder 1 teaspoon
12 Garam masala 1/2 teaspoon
13 Coriander powder 1+ 1/2 teaspoons
14 Salt to taste
15 Oil 3 tablespoons
Method
Heat oil in a pan or kadahi over medium-high heat, add paneer pieces and fry until light brown, drain and set aside.
Into the same pan, add cumin seeds and whole red chilies and let it splutter, now add onions and cook for 2 minutes, add ginger and garlic and cook until light brown. Now add tomatoes, stir, cover and cook over medium-low heat, until tender. Now add all the powdered spices with 1/2 cup of water and cook until oil comes out on the surface. Add spinach puree and paneer, cover and cook over low heat for 20 minutes until thickens. Garnish it with grated paneer and fresh cream and serve.
