Asafetida |

Ginger, peeled & finely chopped |

Mustard oil |

Fresh coriander leaves, finely chopped |

| Method |
Cut the pumpkin into small pieces. Wash it well and set it aside.
Heat oil in a pan or kadahi over medium-high heat, add methi seeds and let it splutter, now add green chilies, ginger and asafetida and cook for 30 seconds, now add turmeric powder, red chili powder, coriander powder and salt, stir, now add pumpkin, stir well to coat all over, cover and cook over medium heat until tender. Now add sugar and amchoor powder, stir and cook until all the moisture is absorbed and oil comes out on the surface. Garnish it with chopped coriander and serve.
