Dry Fruits Pulao

Ingredients
1 Rice 1 + 1/2 cups
2 Cumin seeds 1/2 teaspoon
3 Bay leaf 1
4 Cinnamon 1 small stick
5 Black cardamom, slightly crushed 2
6 Cloves 4
7 Black peppercorns 4-5
8 Mixed dry fruits (cashews, almonds, raisins), chopped 1 cup
9 Oil or ghee 1 +1/2 tablespoons
10 Salt to taste
Method
Heat oil or ghee in a pan, add cumin seeds, bay leaf, cloves, peppercorns, cinnamon and cardamoms and let them splutter, add dry fruits and fry for 1 minute. Now add rice and toast it for 5-6 minutes, add 3 cups of water,, bring to a boil, cover and cook over low heat until almost all the water is absorbed. Turn off the flame and let it set for at least 10-15 minutes. Serve.
Servings -3-4
Introduction of the dish
By toasting the rice for a minute or so, you enhances the aroma and flavor of this stuff.
