| Method |
For gattas-
Combine gram flour, turmeric powder, red chili powder and salt, mix. Now ghee into the flour and mix it with the finger tips until crumbly. Now add required amount of water to knead into glossy, clean, stiff dough. Cover and set it aside for at least 15 minutes.
Bring 4 cups of water to boil in a pan, shape the dough into 2 cylinders, immerse the cylinders into the boiling water and let it cook until they becomes tough and starts to float on the surface, for about 20-30 minutes. Spoon out the cylinders and let it cool, do not discard the boiling liquid. Cut each cylinders into 1/2-inch discs (gattas). Now deep fry the gattas in hot oil until golden-brown. Drain on paper towel.
For gravy-
Heat oil in a pan over medium-high heat, add cumin seeds and let it splutter, now add tomatoes and asafetida and cook over medium heat until tender. Now add all the powdered spices with 1/2 cup of water and cook until oil comes out on the surface. Add 3 cups of water, bring to a boil, and simmer for 15 minutes, now add beaten yogurt and cook for 2 minutes, add gattas and cook for further 2 minutes, Garnish it with chopped coriander and serve.
