Ginger, peeled & chopped |

Green chilies,, chopped |

Oil or ghee (clarified butter) |

| Method |
Grind together ginger and green chilies and set aside.
In a bowl, combine sugar, cinnamon powder, cardamom powder, mix well and set aside.
In another bowl, combine curd, red chili powder, coriander powder, red chili powder, garam masala, salt and ginger-green chili paste, mix. Now add potatoes, stir well to coat all over.
Heat oil or ghee in a pan over medium-high heat, add cumin seeds and let it splutter, now add potato mixture and cook until oil comes out on the surface. Transfer it to the serving bowl, sprinkle with powder mixture and chopped coriander and serve.
