For spread-
Heat oil in a pan or kadahi over medium-high heat, add cumin seeds and let it
splutter, now add onions and cook until light brown. Add ginger-garlic paste
and green chilies and cook for 1 minute. Add all the powdered spices, stir, then
add tomatoes, stir and cook until tender and thick. Now add chopped coriander
and set aside.
Heat ghee or oil in a pan, crack one egg directly into the pan and cook on one
side, now turn it and cook it on second side, drain and set aside. Into the same
pan with remaining oil or ghee, put two bread slices and cook them until lightly
toasted on both the sides. Put one bread slice on plate, place fried egg on bread
slice, then spread some of the tomato spread evenly all over the egg, cover it
with second toasted bread slice and serve. Repeat this process with other raw egg
and bread slices.
