Chicken Curry

Ingredients
1 Chicken, washed & drained 500 grams
2 Onions, finely chopped 4
3 Tomato puree 1/2 cup
4 Ginger-garlic paste 1+ 1/2 tablespoons
5 Mustard oil 1/2 cup
6 Bay leaf 1
7 Turmeric powder 1/2 teaspoon
8 Coriander powder 2 teaspoons
9 Red chili powder 1+ 1/2 teaspoons
10 Garam masala 1/2 teaspoon
11 Salt to taste
12 Black cardamom, crushed 2
13 Cinnamon 1 small stick
14 Star anise 2
15 Cumin seeds 1/2 teaspoon
16 Fresh coriander leaves, finely chopped 2 tablespoons
Method
Combine chicken, 1/4 teaspoon of turmeric powder, 1 tablespoon of ginger- garlic paste, 1/4 cup of mustard oil and 1/4 teaspoon of salt, mix well to coat all over and let it marinate for at least 3 hours.
Heat remaining oil in a pan or kadahi over medium-high heat, add cumin, bay leaf, cinnamon, cardamom and star anise and let them splutter, now add onions and cook until light brown. Add ginger-garlic paste and cook until brown, add tomato puree and all the powdered spices with 1/2 cup of water and cook over medium heat until oil comes out on the surface. Now add marinated chicken together with the marinade, stir and cook until all the water is absorbed and it becomes slightly brown in color. Now add water , stir, cover and cook until chicken becomes tender and gravy becomes thick. Add chopped coriander and ghee, stir and serve.

Chicken is most commonly marinated in the curd marinade. But in this recipe chicken is marinated in mustard oil marinade, and thus display some unique flavor to the dish .
