Curd, beaten |
500 grams |

Sweet mango chutney |

Roasted cumin powder |

Red chili powder |
1 tablespoon |

| Method |
Soak both the dals overnight, drain it, blend it together with minimum possible
water added to it. Set aside for at least 6 hours.
In a bowl, combine together, raisins, chironnji, chilies, ginger and chopped
coriander leaves. This is the stuffing for vada.
Now take small amount of dal mixture, about the size of small ball, wet your
hands a bit, spread dal mixture in your hands like puri, add 1/2 teaspoon of
raisin stuffing, fold it half way like gujhia, to cover the stuffing. Repeat this
process with all the dal and stuffing. Deep fry them in hot oil over medium-
low heat and fry them until golden-brown.
Before serving, soak vadas in hot water with 1/2 teaspoon of salt until tender.
Drain it and press them individually to remove water. Place in a plate, pour
curd over it, then mango chutney, cumin powder, red chili powder and salt to
taste and serve.
