Stuffed vegetables has been cooked and eaten in Indian through ages. We stuff any vegetable and make it even taste better.
In cooking, stuffing is usually a mixture of various ingredients used to fill a cavity
in another food item. When the same mixture is cooked separately, it is sometimes
referred to as dressing. The term stuffing also refers to the process of filling the
cavity with this mixture.
Many types of vegetables are suitable for stuffing after their seeds or marrow has
been removed. Tomatoes, capsicum[hot or sweet], karela [bitter gourd], tinde,
baingan [brinjal or eggplants] etc. can be prepared in this way. Cabbages and similar
vegetables can also be stuffed. They are usually blanched first, in order to make their
leaves more pliable. Then the interior may be replaced by stuffing, or small amounts of
stuffing may be inserted between the individual leaves.
Most common ingredients used to make stuffing for vegetables are potatoes, paneer,
eggs and sometimes even the spice mixture itself.
