Yukon gold potatoes , cut into 1- inch pieces |

Low sodium chicken or vegetable broth, warmed |

Reduced fat sour cream |

Fresh chives, chopped |

| Method |

In a large pan, add potatoes, cover it with water, bring to a boil, cover and
cook until fork tender. Drain the potatoes well, back into the pan and cook
until all the moisture is evaporated. Now add broth, mashed it coarsely, add
sour cream, chives, salt and pepper, stir well and serve.

In this recipe, instead of cheese, butter or buttermilk, I use
sour cream, to retain the flavor, with cut down of the calories at the same time.
