| Method |
|
Simmer the broth in a pan over medium heat. Heat oil in a heavy pan over
medium heat. Add onions and cook for 3 mins, until soft. Now add rice and
stir for 1 min. Then add wine and cook until absorbed, by constantly stirring
it. Add 3/4 cup of hot broth, salt and pepper and simmer until absorbed by
constantly stirring it. Continue simmering and adding hot broth, about 3/4 cup
at a time, stirring constantly and allowing the broth to be absorbed before
adding more, until rice is almost tender and creamy [about 20 mins]. Add all
the vegetables and stir until spinach is wilted. Add parmesan and serve.
