Chicken And Spinach Soup

Ingredients
1 Fresh spinach leaves, washed, blanched for 2 minutes, drained 1/2 pound
2 Skinless and boneless chicken breasts, cut into thin strips 2
3 Chinese rice wine or dry sherry 2 tablespoons
4 Chicken broth or chicken stock 6 cups
5 Sugar 3/4 teaspoon
6 Ginger, finely grated 1 teaspoon
7 Sesame oil 1 teaspoon
8 Soy sauce 1 tablespoon
9 Salt to taste
10 Black pepper powder 1/2 teaspoon
11 Scallions or green onions, chopped 1
Method
In a bowl, combine the rice wine or dry sherry, 1/2 teaspoon of sugar and 1/2 teaspoon of oil, mix well. Now add chicken strips to it, toss well to coat all over, set aside and let it marinate for 30 minutes. In a heavy soup pot, add chicken stock, bring to a boil, now add soy sauce, the remaining sugar, stir. Add the chicken strips, bring back to a boil, and cook until the chicken turns white and cooked through. Now add spinach and ginger and cook for 6 minutes. Season it with salt and pepper. Garnish it with scallions and serve.
