Ingredients

Fresh spinach leaves, washed, blanched for 2 minutes, drained |

Skinless and boneless chicken breasts, cut into thin strips |

Chinese rice wine or dry sherry |

Chicken broth or chicken stock |

| Method |

In a bowl, combine the rice wine or dry sherry, 1/2 teaspoon of sugar and
1/2 teaspoon of oil, mix well. Now add chicken strips to it, toss well to
coat all over, set aside and let it marinate for 30 minutes.
In a heavy soup pot, add chicken stock, bring to a boil, now add soy
sauce, the remaining sugar, stir. Add the chicken strips, bring back to a
boil, and cook until the chicken turns white and cooked through. Now
add spinach and ginger and cook for 6 minutes. Season it with salt and
pepper. Garnish it with scallions and serve.
