Deep Fried Fish With Hot And Sour Sauce

Ingredients
1 White fish fillets 500 grams
2 Egg white, lightly beaten 1
3 Salt to taste
4 Ginger , grated 1 teaspoon
5 Oil for frying
6 Cornstarch for dusting
For sauce -
7 Fresh red chili, finely chopped 1
8 Fresh green chili, finely chopped 1
9 Canned Chinese pickle with juice,shredded 1/2 cup
10 Water 1/2 cup
11 Sugar 1 tablespoon
12 Cornstarch or cornflour 1 tablespoon
13 Salt to taste
Method
Remove all skins and bone from fish and cut into short finger lengths .Add salt ,ginger and egg white to it ,set it aside.Take oil in a pan [wok] ,coat the fish with cornstarch and fry in oil over medium heat.Drain on paper . Heat a pan ,add pickle juice ,water ,sugar and salt and bring to a boil .Now add cornflour mixed with cold water,again bring to a boil until thickens.Add chopped pickles to it ,Take fish in a platter,pour the sauce over and serve with rice.
