Fresh mangoes, peeled, pitted and chopped |

| Method |
Place the mangoes in a food processor and blend to a smooth paste. Transfer
to a bowl, add evaporated milk and sugar, mix well.
In a measuring cup, measure 1 1/2 cups of hot water, add the gelatin by
quickly whisking it until all the gelatin granules have dissolved. Then add to
the pureed mangoes and mix well. Ladle the mixture into 4 dishes.
Refrigerate for at least 2 hours. Put the dishes in a baking pan with some hot
water to help for even baking. Use a flat knife to run round the edges of the
pudding, place a plate on top of the dish and quickly invert it. Squeeze over
some lime juice, sprinkle with powdered sugar, garnish it with lime zest and
sprig of mint and serve.
