Ingredients

Wonton wrappers |

Mixed nuts [walnuts, cashews and almonds], chopped |

Dates, pitted and finely chopped |

Lemon zest |

Orange juice |

| Method |
|
Combine dates, chopped nuts, lemon zest and orange juice, mix well. Add
more orange juice if it is too dry. Form the date mixture into small
cylinders about as thick as your little finger and half as long. Now put each
roll of date mixture on a square of wonton pastry, placing the filling
diagonally. Pick up corner of pastry and place it over the filling, tucking
point under. Roll up the wonton into a tube so that filling is completely
enclosed, then twist the ends of the pastry tube, putting a finger in the end to
keep the shape like a Christmas cracker. Heat oil in a wok over high heat,
fry the wontons , few at a time, until golden-brown all over. Drain on paper
towel, sprinkle with sugar and serve.
