Smoked Tangerine Chicken

Ingredients
1 Roasting chicken 1 [of around 2 kg]
2 Dried tangerine peel , around the size of a rose leaf 1 piece
3 Light soy sauce 1 tablespoon
4 Chinese wine or sherry 1 tablespoon
5 Salt 1 teaspoon
6 Sugar 1 teaspoon
7 Star anise, whole 1
8 Brown sugar 1 tablespoon
9 Aluminum foil heavy
10 Fresh coriander leave, finely chopped 3 tablespoons
Method
Combine soy sauce, wine, salt and sugar in a bowl. Rub the chicken inside and outside with this mixture and allow to marinate for 30 minutes, then put in a steamer and steam for 15 minutes.
In mortar and pestle crush the tangerine peel and star anise as finely as possible and mix with brown sugar. Take a stout saucepan with a well-fitting lid, large enough to hold the whole chicken. Line the base of the pan with heavy duty foil, bringing it a little way up the side of the pan. Sprinkle sugar and spice mixture evenly over foil, then put a wire rack in pan and put chicken over it. Cover pan tightly, put over medium heat and when smoke starts escaping under lid turn heat very low and smoke chicken for 15 minutes or until done. Slice the flesh off the bones and arrange on a platter, or chop through bones into small serving pieces. Garnish it with chopped coriander and serve.
