Ingredients

Skinless chicken thighs, each cut into half |

Potato starch |

Peanut oil |

Red chili, seeded and finely chopped |

Green onion or scallion, finely chopped |

| For the marinade- |

Chinese five-spice powder |
11/2 tablespoon |

Garlic, minced |

Sesame oil |
1 teaspoon |

Light soy sauce |
1 tablespoon |

Salt |
1/2 tablespoon |
| Method |
|
Combine all the ingredients of marinade in a bowl, add the chicken pieces,
toss to coat all over, let it marinade for at least 5 hours, preferably
over night. Heat oil in a wok, coat the chicken pieces in potato starch and
add it to the wok. Fry until golden brown all over. Drain on paper towel,
garnish with chopped chili and green onions and serve.
