Spinach Soup

Ingredients
1 Spinach leaves, blanched [cook in boiling water for 3 mins]. 500 grams
2 Spring onions, chopped and blended to a paste 1 cup
3 Vegetable or chicken stock 350 ml
4 Nutmeg a pinch
5 Bay leaf 1
6 Fresh whipped Cream 1 cup
7 Salt to taste
8 Pepper powder 1 teaspoon
9 Oil 1 tablespoon
Method
Heat oil in a large pan. Add spring onion paste and cook until soft. Now add flour and stir for 1 min. Add stock, spinach, nutmeg, bay leaf, salt and pepper, bring to a boil, cover and simmer for 10 mins. Remove the bay leaf and blend the spinach soup either with immersion blender or food processor carefully. Re- season if required, add cream and serve hot.
