Spinach leaves, blanched [cook in boiling water for 3 mins]. |

Spring onions, chopped and blended to a paste |

Fresh whipped Cream |

| Method |
|
Heat oil in a large pan. Add spring onion paste and cook until soft. Now
add flour and stir for 1 min. Add stock, spinach, nutmeg, bay leaf, salt
and pepper, bring to a boil, cover and simmer for 10 mins. Remove the
bay leaf and blend the spinach soup either with immersion blender or
food processor carefully. Re- season if required, add cream and serve hot.
