| Method |
Heat a soup pot over medium heat. Add butter, then add onions and cook
until caramalised [brown] by frequently stirring it for about 30 mins.Now
add garlic and cook for 1 min.Remove the pot from the heat and brandy to
it. Return the pot to the heat and cook until dry by constantly stirring it.
Now slowly add the broth, bring to a boil, lower the heat, cover it and let it
simmer for about 20 mins.Add salt and pepper.
Arrange 6 ovenproof crock pots or deep soup bowls on a baking sheet and
ladle the hot soup into them. Arrange 2 slices of toasted bread on top of
each soup and sprinkle with the cheese .Keep them under broiler until the
cheese is melted and bubbling. Serve hot.
